Scavenging through restaurant porn I came across this...

Now, the only "Well known maker..." of artisanal cheeses, founded in 1982, in Dallas, that I know of is The Mozzarella Co. on Elm Street. Founder, Paula Lambert has put in more than her time as the first, and most successful, cheesemaker in Dallas. Winning awards internationally and putting Dallas on the cheesemaking map.
