At Three Sticks Wines’ historic Adobe tasting room, just off the square in downtown Sonoma, LeCordon-Bleu trained Chef Oscar Bendeck embraces the excitement of the season by offering guests an exquisite experience designed to delight one’s senses. We invite you to experience the exuberance of the season with the vibrant 2021 One Sky Sonoma Mountain Chardonnay ($70) paired with Chef’s very own Charred Eggplant Mousse (recipe below). Bright and luscious at the same time, this special Chardonnay is aged in French oak, offering an elegant caramel finish—the perfect complement to the rich, earthy, smokiness of the dish. The bright acidity of the wine cuts through the creaminess of the eggplant, highlighting a marriage of delicious textures. The finish on the wine and the eggplant linger together, enticing one for another sip and bite!"

TASTING NOTES

Appearance: Medium intense lemon;


Nose: Medium intense ripe fruit of yellow apples, lemon, peach, mango, cantaloupe;


Palate: Dry, medium acidity, medium alcohol, medium plus body, pronounced flavor intensity of yellow apples, tropical fruit (mango, pineapple). Moderate carbonic backbone and medium finish.


This is a high-quality example of chardonnay in the New World/California style.It is always hard to estimate with New World chardonnay but this has the characteristics to age.
