Every year, the Renaissance Dallas Hotel is the destination of choice for hundreds of company dinners at Thanksgiving or around the Holiday period. Such large events require planning, so the hotel pulls out all the stops at this time of year for Christmas In July, a presentation of all the dishes, from appetizers to dessert, that they will be serving in the season so that their corporate customers can start to plan menus.

I was lucky to be invited to sample the wares at a media event. Chef Joseph Graffeo has really blown the larger doors off this year. There are going to be lots of happy customers when the holidays come around. Not only is there the cornucopia of choice below, but he has that "great chef" attribute of "gilding the lily" to make the everyday, special. Case in point: mashed potato gets smoked shallot whipped in to it. It's the kind of thing that makes you want to have a plate of mashed potato, eaten with a teaspoon, each byte savored for its full, intoxicating, effect - maybe over a whole episode of Ted Lasso (or your binge of choice).
